Cold storage for meat is a storage facility used for storing meat. It is also known as a frozen meat storage facility or a frozen meat cold storage facility. The main types of meat stored include: pork, mutton, fish, beef, duck, cooked meat, chicken, dog meat, and seafood. The freezing temperature of cold storage for meat is -18℃ to -23℃. Some cold storage facilities require temperatures as low as -30℃ or even lower, such as tuna cold storage which requires temperatures as low as -60℃.

Introduction to Meat Aging:

Chilled meat refers to meat that has undergone an acid-removing process under cooling conditions. Its advantages include: under a cooling temperature of 0℃-4℃ for 24 hours, enzyme activity and the growth and reproduction of most microorganisms are inhibited; a dry oil film forms on the surface of the chilled meat, reducing moisture evaporation and preventing microbial invasion and reproduction on the surface; and increasing the meat’s flavor and nutrition. Therefore, chilled meat is easier to cook, has a delicate texture, is juicy and delicious; it is also easier to cut, and the cut surface has a special aromatic flavor. The price of aged pork is 20% to 30% higher than that of regular pork. This is mainly because the production of aged pork involves multiple strict processes.

Seafood cold storage facilities are primarily designed for the storage of seafood, including fish and other seafood products. Seafood cold storage facilities should be prepared to control temperature and humidity, and different temperature ranges should be constructed for different types of seafood. The temperature range is -18℃ to -30℃. Exceeding this temperature range will affect the taste of the seafood. Some special seafood products require ultra-low temperature storage, such as tuna, which requires a freezing temperature of -60℃.

Different Classifications of Seafood Cold Storage:

1. Seafood Refrigerated Storage

Refrigeration Temperature: -5 ~ -12℃

Storage Period: 1-2 days;

Note: If goods cannot be shipped in time, they need to be quickly stored in frozen storage.

2. Seafood Frozen Storage

Temperature: -15 to -20℃

Storage Period: 1-180 days (depending on the type of seafood). Note: Frozen storage has a longer storage period, but some special seafood products have a short storage period even when stored in frozen storage; these require special handling.

3. Seafood Ultra-Low Temperature Cold Storage (Quick-Freezing Cold Storage)

Temperature: -25 to -30℃ (or lower -60℃)

Storage Period: Quick-freezing process generally takes 5-8 hours;
