1.Seafood cold storage

The temperature of the seafood cold storage is different according to the storage time:

① The cold storage with a temperature design range of -5 ~ -12℃ is mainly used for temporary turnover and trading of fresh seafood.

The general storage time is 1-2 days. If the seafood is not shipped within the 1-2 day cycle, the seafood should be placed in a quick-freezing freezer for quick freezing.

② The freezer refrigerator with a temperature range of -15 ~ -20°C is mainly used for long-term storage of frozen seafood from the quick-freezer. The general storage period is 1-180 days.

③ The cold storages with the above two temperatures are more commonly used and common in our lives. The other is the seafood cold storage with a temperature design range of -60~-45℃. This temperature can be used to store tuna.

The water in the tuna flesh cells begins to freeze into crystals at -1.5°C, and the water in the fish flesh cells freezes into crystals when the temperature reaches -60°C.

When tuna starts to freeze at -1.5°C~5.5°C, the cell body of the fish becomes more crystalline, which destroys the cell membrane. When the fish body is thawed, the water is easily lost and the unique taste of tuna is lost, which greatly reduces its value. .

In order to ensure the quality of tuna, quick-freezing can be used in quick-freezing cold storage to shorten the time of "-1.5℃~5.5℃ larger ice crystal formation zone" and increase the freezing speed, which is also a more important job in tuna freezing.

2.Seafood quick-frozen cold storage

Seafood quick-frozen cold storage is mainly for short-term quick freezing of fresh fish in order to maintain the freshness of the transaction so that it can sell at a good price.

The general quick freezing time is 5-8 hours, and the temperature range is -25 ~ -30℃. Quick-freeze well and transfer to -15 ~ -20 ℃ seafood cold storage for fresh storage.
